Pumpkin Bars

Ingredients

Base

  • 2 c all-purpose flour
  • 1 t baking soda
  • 1/2 t baking powder
  • 1/2 t salt
  • 1/2 t ground cloves
  • 1 t ground cinnamon
  • 1 t ground nutmeg
  • 1 t ginger
  • 3/4 c melted butter
  • 1 c sugar
  • 4 eggs
  • 2 c pumpkin

Frosting

  • 8 T room-temp butter
  • 6 oz room-temp cream cheese
  • 1/8 t salt
  • 1 t vanilla
  • 3 c powdered sugar

Directions

Base

  1. Preheat the oven to 350.
  2. Grease a 9x13 inch baking pan.
  3. Mix flour, baking soda, baking powder, salt, cloves, cinnamon, nutmeg, and ginger.
  4. Beat butter with sugar on medium speed until just combined.
  5. Add eggs one at a time. Beat each one in before adding the next.
  6. Beat in pumpkin.
  7. Add dry ingredients and mix on low until well combined.
  8. Pour the batter into the pan and smooth the top.
  9. Bake for 15 minutes.
  10. Set on a wire rack and let cool completely.

Frosting

  1. Beat butter with cream cheese on high speed until smooth and creamy.
  2. Beat in salt and vanilla.
  3. Add powdered sugar and beat on low for 30 seconds, then switch to high speed and beat until light and creamy.
  4. Spread the frosting on the cooled cake.
