Chicken Quesadillas

Ingredients

Quesadillas

  • Monterey Jack cheese, grated
  • Sharp cheddar cheese, grated
  • 3 chicken breasts, butterflied and pounded thin
  • Flour tortillas
  • Vegetable oil
  • Guac, salsa, and sour cream for serving

Marinade

  • 2 Tbsp vegetable oil
  • 2 garlic cloves, crushed
  • 1 tsp oregano
  • 1 Tbsp cumin
  • 1 tsp cayenne
  • 1 tsp paprika
  • 1 tsp white sugar
  • 1 lime, juiced
  • 1 Tbsp olive oil
  • 1 tsp kosher salt
  • 1 tsp freshly ground pepper

Directions

Marinade

  1. Whisk it up.
  2. Put marinade and chicken in a bowl. Massage to cover evenly.
  3. Cover and refrigerate 30 minutes.

Chicken

  1. Preheat skillet over high heat.
  2. Cook chicken on both sides. Should be a nice golden brown.
  3. Remove, cool a little, slice.

Quesadillas

  1. Add chicken and cheese to quesadillas.
  2. Heat a generous amount of oil in a skillet over medium.
  3. Drop in your quesadilla and cook for about a minute and a half. Should be a nice golden brown.
  4. Flip and do the other side.
