Ingredients
Quesadillas
- Monterey Jack cheese, grated
- Sharp cheddar cheese, grated
- 3 chicken breasts, butterflied and pounded thin
- Flour tortillas
- Vegetable oil
- Guac, salsa, and sour cream for serving
Marinade
- 2 Tbsp vegetable oil
- 2 garlic cloves, crushed
- 1 tsp oregano
- 1 Tbsp cumin
- 1 tsp cayenne
- 1 tsp paprika
- 1 tsp white sugar
- 1 lime, juiced
- 1 Tbsp olive oil
- 1 tsp kosher salt
- 1 tsp freshly ground pepper
Directions
Marinade
- Whisk it up.
- Put marinade and chicken in a bowl. Massage to cover evenly.
- Cover and refrigerate 30 minutes.
Chicken
- Preheat skillet over high heat.
- Cook chicken on both sides. Should be a nice golden brown.
- Remove, cool a little, slice.
Quesadillas
- Add chicken and cheese to quesadillas.
- Heat a generous amount of oil in a skillet over medium.
- Drop in your quesadilla and cook for about a minute and a half. Should be a nice golden brown.
- Flip and do the other side.
